  • I love how Gordon always adds little tips that are actually paramount to a decent dish - eg. “2/3rds ingredients and 1/3rd batter is the secret to a good fritter..” Just as I had been thinking that I really enjoy fritters but am disappointed when I’ve had ones that are too doughy.

  • Although these recipes look great, no average person doesn’t have all the ingredients needed stocked in their kitchen. Yea, sure, make a grocery list, but after buying & using you better have more recipes ready to use up the left over ingredients before they go bad, otherwise this one recipe could cost you a fortune to make if you have to throw the rest of the ingredients out.

  • Make sure you sieve your flour, you wouldn’t want any lumps in the lumpy mixture lol. So many steps are useless in cooking, it’s astonishing. Why would you sieve it if the mixture is supposed to be lumpy?

  • the whitebait one is also one of North Vietnamese food, but we marinate it with fish sauce, garlic and chili pepper, then fry till it crunchy. If you have chance to buy fish sauce from some of the region in Vietnam, not factory made but made by people in that region, even better if you can take the smell.

    • @Helen PaulsSorry, this is a long one, but, please read it: Good point. I don't think individualism and Community are polar opposites. I actually think Japan's community-oriented culture does more to protect individualism than the fend-for-yourself attitude in the US. At the same time however, I detest people that try to force Community-oriented culture on people using government. I deeply respect that the strong sense of community mostly comes from personal choice and values. That is ideal to me. I'm not saying that it's good to isolate in bubbles, but I do think that it can be useful, especially at times like now when internet culture is pushing a sort of "cultural imperialism" and trying to force other cultures to change or "be canceled" as a result. I fully understand that that might sound hypocritical since I called your statement sexist earlier, but the honest truth is, I was just having a bad day and trying redirect what I assumed was your own beliefs back on you. I don't actually view what you said as sexist at all, and actually think there is some truth to that. I plan to move there in December and hope I can make the stay permanent, but I don't know if I'll be able to afford it. I do not have a degree and university education is even more expensive here than it is there. I have enough for 2 years of language school and am HOPING I will perform well enough to apply for scholarships to continue my education there into cybersecurity. My girlfriend does not like the idea of marriage, and that is not something I want to pressure her into, so getting a degree and work sponsorship is the only path I can think of.

    • @Helen Pauls Hmm. Thank you. You are a very calm person. I don't get much of that around here. I also agree that it should improve, but just like many of the other things people critique, I worry about an over-correction. Japan has a habit of addressing things slowly and efficiently, and I think that is a good habit to maintain, because sometimes "solutions" are improper, and even when they are the correct course of action, they can be disastrous when pushed too quickly. Both the US and the UK have been ravaged by trying to "fix" things that either don't need to be fixed at all, or that need to be addressed slowly over time, and it causing chaos to culture and individuality.

    • @Helen Pauls Oh don't get me wrong. I've been there. I mean I'm permanently moving there. The only viable complaint people have is that work culture is strict in Japan (which is debatable if it's a bad thing or not), but even that doesn't compare to the US. Overtime is even more common in the US, and unlike Japan, we don't even have any guaranteed holidays. Japanese work culture is an "upgrade" for me, lol. Although I value a strong work ethic and think it's good for a person anyway.

    • @Helen Pauls That seems an odd thing to say. I have many friends in Japan, am dating someone from there, and will be moving there in December. I know more men that can cook there than women. Japan is not behind at all. In fact, I'd say it's ahead on most things. Definitely one of, if not, the safest country for women and children to live in. The problem isn't nationality. The problem is generation. I bet you're 40 or above, correct? Or at least most of the people you are around.

    • @Helen Pauls That's false. Outdated notion of gender roles. Both men and women are equally capable and responsible for housework and cooking.
